My dinner was so good tonight that I just had to post about it! I made homemade Barnyard Busters (as in a copycat from Tee Jays family restaurant) for my family tonight. For those of you that don't know what a Barnyard Buster is, it is eggs, biscuits, and hashbrowns layered on a plate and smothered with a sausage gravy. I follow a ketogenic WOE, so I naturally assumed that I would not be able to eat any of it. I figured it would just be bacon and eggs for me. But at the last second, I glanced at the nutrition facts on the sausage gravy that I buy (yes, pre-made because I can't make it myself from scratch), and it was only 2 grams of carbs per quarter cup serving! Well, yay for me!!! I left out the biscuits and hashbrowns of course, but stacked up my eggs, gravy, and bacon with pure excitement. It was amazingly delicious and so filling. Comfort food at it's finest! Next time, I plan on toasting up a low carb tortilla to use as a substitute for the biscuits.
