Trying to keep to 1800-2000 calories a day is a struggle, but let's see what happens after a couple of weeks.

That can be a lot of calories if you choose the right foods. I'm a volume eater, so I look for foods that give me the most nutritional bang for my calorie buck. You could have a bagel and cream cheese for 500 calories or you can have two eggs, 2 pieces of light toast, fruit and hash browns for the same calories. Of course, sometimes I choose the bagel, but look for ways for to get more for less. Cooking light.com, skinnytaste.com and emilybites.com have recipes that give you more food or less calories.
