I do both. I have entered in an entire day of planned food, then modified later to reflect reality (like not eating everything I thought I would). I have also backed down from a snack after seeing what’s what (or going forward with knowledge). Most days I am eating familiar food and track after I eat, or even at the end of the day if I wasn’t able to do so incrementally (this is more difficult, not recommended for accuracy). I will also go for the higher values if I am estimating portions, as I would rather err on the side of a gut “woah slow down” when I look at the numbers.

Nice, yeah I always go just a little bigger on portion sizes, but I tend to be close. I try and track just before I eat and add anything later that I end up snacking on after I eat. Usually my "meal" doesn't 100% fill me up so I add some stuff.
