Pumpkin Oatmeal cookies.1 cup of pumpkin purée, 2 1/2 cups oatmeal, 1tsp pumpkin pie spice, 1/2 c white chips, 1/2 c chopped almonds & 2Tbls dark Karo syrup. Bake 350* for 10 minutes. 24 cookies. Approx. 79 cal
These cookies are good!

Think you could substitute Karo syrup for maple syrup?

I don't know why you couldn't, YOH. I don't have Karo syrup, so that's what I would do. I took a screen shot to save the recipe. They look delicious!

Oooooh, YOH, chocolate is a good idea. I might try cacao nibs instead of chips, though. We like our chocolate bitter and dark as a mile deep in a cave on an overcast, moonless night

And I'll let you know if I make them! I have some canned pumpkin I need to use, and I've been looking for a non-processed alternative to the granola bars we were eating while hiking and skiing. We're running through the last of those and have decided not to buy them again

I also have some canned pumpkin I need to use. I don't like Karo syrup so I may try maple syrup as well. Maple syrup is not as thick as Karo so I'd add it slowly, you may not need as much.

Diana 1234, the recipe actually calls for put maple syrup, but since I only had the Karo, I used that.

I think i may try to make a batch tomorrow. Need to go get pumpkin pie spice and pumpkin pie canned. Donated our last can to our naughty 4 legged child who got into something that made him ill.

Writing wyo, I had 1/2 bag of the white chips so I used 1/2cup of those. These are a soft cookie and are way better than the granola bars at the store. I had canned pumpkin last November and since October is coming quickly, I thought I had better use what I had canned! Out of 3 pumpkins I was able to can 15 quarts of pumpkin and froze about 20 cups of pumpkin purée! It was a job, but the rewards have been great!! No additives just pure pumpkin!

The Karo syrup was a substitute for the maple syrup. If I don’t have something I substitute for something else….😁

Use pumpkin purée, not the pumpkin pie, also adding the nuts made the dough extremely dry, I ended up using about 1/2 cup of water, forgot that part. Add the water a little at a time so you don’t make the dough to wet. Check out the original recipe from runningonrealfood.com Healthy Pumpkin Oat Cookies
