First time baking / using spaghetti squash! It's pretty good!

I'm eyeballing how much sauce + hamburger........ (3 oz hamburger & 1/2 cup ragu) I guessed at the squash too (I guessed 2 cups) hmmmm .... close enough I guess

Redporchlady: Question here - I like the idea of the pie (recipe, please) I only used half of the squash - is the other half still usable? I already baked the darn thing. I didn't know how much would be edible. Second question - besides spaghetti, spaghetti pie and just eating this squash with butter and Parmesan, what other ways can it be eaten? Ideas? Thanks in advance!! (TIA)

We have made a southwestern bowl with it placing black beans, corn & some sautéed onion sprinkle with some cheese and heat. Any other veggies you like.

I put the spaghetti squash in the bottom of a pie plate. I have mixed a little egg into it for more protein but you can do what you want. I then add a mixture of hamburger and any sauce of your choice. Just keep the sauce light becasue the spaghetti squash has enough moisture. Then on top of the hamburger, spread 1 cup of cottage cheese - I use 2% and then sprinkle with a little bit of mozzerella & parmesean if you can have the fat. I then bake in an oven for 350 degrees at least for 30 minutes but sometimes longer to get the juice to bake off. I then split it up into serving sizes. I have even froze it for quick meals later.

You can also put the cottage cheese first and then the meat if you want also.

Ok Cool! So - redporchlady - this squash, is it halved and still in the skin while cooking? Or baked first then "spaghetti'd" and placed on the bottom of the tin - like a crust? Sounds yummy! I will try it when I get some more info..... also, what do you think about my already cooked half that is in the fridge right now? Still good?

I prefer spaghetti squash over pasta anytime!! It’s delicious.

Yes cook it first and then use it for the crust. I would totally use the leftover in the refrigerator to make this. I will eat the leftovers for up to 4 days or freeze it and use later.
