Cooking good food…

I actually wasn’t planning to write in my journal today as I was just going to continue my calorie counting like a good girl without actually making any major progress towards any of my 5 monthly goals. However, I ended up thinking about food choices after a great discussion with my colleagues over lunch about cooking and our favourite vegetables.

First, you should understand that I eat a strictly vegetarian diet and always have done. I do believe everyone should try to cut down on the meat a bit, but it’s their personal choice and I’m not all that bothered what other people choose to eat to be perfectly honest. However that’s not why I chose vegetarianism for myself. In fact, I never chose it at all – I was born this way. I’ve simply never felt the urge to eat any meat/fish/chicken and I’m not particularly keen on other foods with weird animal extracts like jelly or marshmallows. I just don’t think it’s nice food to eat. That’s just me.

However that doesn’t mean I’ve been making fantastic food choices up until now. That’s why I came up with number two on my list of goals for this month:

2. Take the time to cook something “proper” once a week


Initially I was hoping to do this at weekends when I have more time, but then I remembered I’ve conveniently booked up my weekends for most of this month and I really don’t want to backtrack on what I pledged to achieve, so I need to get my arse in gear. To that end, I have ordered a cookbook called “Japanese Vegetarian Cooking” because a) the Japanese seem very healthy as a nation and I believe their diet plays a huge role in that and b) I genuinely love Japanese food. I discovered it several years ago and, although very different to western food preferences, I found it excitingly tasty. Unfortunately my family doesn’t agree. Their loss.

Of course the book won’t arrive for several weeks and I need to start cooking this week. Not a big deal though - in the past I actually used to cook more than I currently do and would take regular Japanese recipes and try to come up with my own vegetarian version. I’m not exactly an awesome cook and my concoctions probably weren’t entirely authentic but it was good enough that I’ll try to recreate one or two of them again this week. I still have most of the dried foods I’ll need, so thankfully a huge expedition to acquire the necessary ingredients won’t be required. When the book does arrive it will hopefully give me some fresh new ideas so I can keep trying new things. I have a plan and I’m on track.

On a side note, my lunch today was a simply gorgeous lentil moussaka from the supermarket and it was awesome! So tasty it was unbelievable, yet still easily achievable within my caloric limit. Honestly I would have expected something with that much bechamel sauce to be far more than 500 calories, so lunch was a definitive Win. Must learn how to cook that properly so I can make it myself at home and have it often.

Finally, I’m now officially under 170 pounds. Happy days!
