Came up with a recipe for a faux chocolate mousse today that came out really well. I had seen a recipe on-line that was a paleo cupcake. I was skeptical and read the recipe. The frosting was an avocado with sweetener, and cocoa powder. Hmmm. No eggs, no dairy, and no sugar.

Got me thinking today, and so I decided to go for a variation of that....more like a mousse. I had a VERY ripe avocado sitting in the fridge so that was the start. I mixed it up with 3 tbsp of cocoa powder, 2 tbsp of coconut cream, 1 tbsp of ghee, and 1 tbsp of truvia. (This is the only sweetener I will use.) Blended it all together with my stick blender because I was too lazy to get out a big old blender, and then have to clean all the parts. Worked just fine. And it was yummy. Tasted the avocado just a bit. But it seemed as the mousse sat for a little bit, the cocoa dominated. Ate half at lunch and put the rest away for another day. Nice to have the occasional treat that won't mess with my blood sugar or my gut.

Got my workout in this afternoon. I was tempted to postpone it till tomorrow, but then it just hangs in my head, nagging at me, making me feel guilty. Glad I did it and felt good afterwards.

Sounds good - I've done an avocado, honey and cocoa "pudding" myself. It's pretty delicious.
