Stir fry with chicken, broccoli, carrots, green and red bell peppers, onion tops, water chestnuts, fresh green beans, soy sauce, rice and stir fry seasonings. This made two bowls and I still have one left for Friday nights leftovers :). Now I can eat PIZZA for dinner tomorrow without guilt 😉
