Well, having a digital scale is a roller coaster. Good thing I read an EXCELLENT article posted on the Atkins website about weight and fat cells. Did you know that the human body can only lose (at best) 2 pounds of actual fat per week? The rest is water. And, that when a fat cell is emptied of its fat, it may fill up with water if it gets an 'alert' that the body is getting dehydrated? When it fills up with water, the scale registers a weight gain but your body is really waiting for enough water intake to feel confident to let that water-filled fat cell finally empty is temporary load.

Good point! Written by a biologist, so I think it pertains less to 'all humans' but to 'most humans' in that most of us don't train 12 hours per day and go through the rigors they do. I was most interested in what he said, however, about empty fat cells refilling with water...that made sense to me and since then I have been testing it by keeping my sodium in check and I have had fewer fluctuations.
