This was a bad weekend for the diet. Our band played Saturday night -- restaurant meals throw me off. Sunday the wife made brownies. She might as well leave syringes full of heroin all over the place, I'd have an easier time ignoring them.
However, for dinner sunday I made the Portabello Mushroom pizza recipe. I recommend pre-cooking the mushrooms on a rack with a tray underneath to catch the drippings. A LOT of water/mushroom broth came out of them. After that, we sauted some bell pepper and red onion in olive oil, then reduced with a little red wine. Place that in the hollow of the precooked mushrooms, throw on a little canned artichoke heart, garnish with mozzarella if you are good with cheese. (Lactose digestion is one of my super-powers. I'm descended from northern Europeans.) Maybe drizzle the whole thing with a little balsamic vinegar. Bake around 450*F for ten minutes and enjoy! It's not a pizza. No crusty crunch. But if you like mushrooms -- it'll do.
