Struggling with anxiety this week, so it was comfort food time -- a smoothie. Soymilk, tofu, spinach, butternut squash, banana, blueberries & yogurt whey. Wasn't sure what it would look like, but it blended up to a really pretty purple.

I do, too, Morticia. I don't eat smoothies often, and I like them to look pretty if I have one 😊 Wasn't sure how the spinach and blueberries were going to look together, but it worked. Thank you for the well wishes. Doing my best to take care of myself until this passes, and I know it will

Thanks, StormsGirl 😊 Nourishing is indeed key. The good thing is that I've been eating well and building a good food environment long enough that I a) don't crave too much junk, and b) don't really have it in the house to begin with 😂 It's not like I have the option of tearing into three bowls of Captain Crunch in a fit of self-pity when all I have in the house are old-fashioned rolled oats 😜

Interesting. I've never had squash in a smoothie. I'm assuming it's cooked?

Never heard of or tried putting tofu in a smoothie - gonna try this for a hearty vegan breakfast smoothie, thanks for the idea!

Both tofu and cottage cheese, and of course plain yougurt work great in a smoothie

Sorry I haven't been responding. It has seriously been a week. Thank you for all the well wishes. I'm in a better mental state now. Had a lovely reunion with friends I hadn't seen in 30 years, and we plan to stay in touch now. Got a massive amount of work done at the office this week and feel good about that. Yes, the squash was cooked, and it was really good. I try to put veggies in my smoothies sometimes. Others I've used are cucumber (peeled, seeds removed), beets, pumpkin (pumpkin spice smoothies!), cooked carrots, and of course, kale and spinach. Avocado is also nice, although I guess technically, it's a fruit. Avocado + banana + cocoa powder makes a wicked chocolate shake 😋 Since I don't use protein powders and tofu is a staple in our house, tofu is a natural choice for bumping up the protein. Haven't tried cottage cheese. I would think you'd need to get the no salt variety for smoothies, and our grocery no longer carries it
