Had a hankering for blueberry walnut muffins this morning. Mine use whole wheat flour + flax, less sugar, and no oil. Not to everyone's taste, but I prefer them that way. Hard to stop at 2! A little farmers market apple butter to top. And coffee, of course

Apple butter -- apples and sugar cooked, cooked, cooked down until dark brown and thick enough to be spreadable. Like make applesauce, and then just keep cooking it. Lovely stuff 😋

Wow. No applesauce? It's such a staple here! My sister used to make apple butter in her crockpot, but she would add Splenda to make it sugar free. I've bought apple butter made with no sweetener whatsoever and loved it, so I don't think it's absolutely necessary. I'm sure you could find recipes online. I'm loving this jar from the farmers market so much that I think I need to try to make some once I run through it

buenitabishop -- I'll invite you over for muffins and apple butter and coffee too! The recipe makes 12, so there will be plenty! Conscious Eater -- I did a quick recipe search on Google for apple butter, and the sugar free recipes I've looked up before called for artificial sweetener, which I don't want to use. I'll probably look for a sweeter variety of apple, use the crockpot technique, and won't add any of other. Don't plan on peeling mine either. We'll see how it turns out

Thanks, melissatwa! Buenitabishop -- I've never used stevia, so I don't know. At home, my strategy is to go ahead and use sugar or another caloric sweetener, but just to use a lot less of it than the recipe calls for. I don't think there's much harm in stevia if that's what works for you. Give it a go!
