2-ingredient fudge. Take fresh medjool dates and mush them up. I find using my hands is easiest. (Mine were a little dry, so I soaked them a few minutes 1st) Work in as much cocoa powder as you can. Oh, so good and I think WFPB (not sure about cocoa)

It's definitely processed, but since it's the only ingredient and from a pod, I'd say cocoa is just as much WF/PB as ground coffee or the dates you're using. Whatever; it's not like you're baking donuts 😄

JustBananas -- yeah, it's not like either dates or cocoa powder are bad for you 😉 It was more a question of whether cocoa is considered processed on whatever the "official" WFPB list is, if there is one. Some types of minimal processing are generally considered OK. I know Food Revolution Network uses canned beans as an option in recipes, and they also include chocolate in some of them. Cocoa has healthy polyphenols and a surprising amount of fiber. I've been working either dark chocolate or cocoa into my diet nearly every single day 😋

Thanks to your post, I tried this the other day and I loved it! I added in a bit of shredded coconut. I think I'll try it with a bit of toasted pecan in the future, or maybe a smidge of peanut butter. I liked it with just the coconut though, I think that'll be my go-to. Thank you for sharing!

Coconut...yum! 😋 I'll have to try that. I bought some, but I never think to use it. I've seen people use peanut butter in this on YouTube, so that would be a good addition. Glad you liked it! 😃
