Ok folks....believe it or not, I have never roasted veggies before....I know, right? The broccoli & cauliflower look okaaaaay...but I apparently cut the sweet potato up too small and insinerated it. Sheesh! Constructive, instructive comments?

Looks good to me. I would season the sweet potatoes and it would still look like it was roasted separately

I roasted them separately, giving the sweet potatoes a head start. I only had cryptic instructions at the time...seemed simple enough...just need to be more mindful about stirring and cutting larger pieces. How much oil should I use? and what are some fave seasonings?

Thanks XryRn...it's just that when I see other people's photos, the veggies look very moist (oily even) and I'm wondering how much EVOO to use and still be calorie friendly?

I use avocado oil just a tsp. My seasoning is italian or the complete seasoning with low sodium. If I have to use the oven I would also use a tsp of EVOO mixed with garlic crushed and a squeeze of lemon yum baked for 30 minutes

My favorite is cauliflower with curry powder (which is not hot). So good!

Nothin wrong with how you did 'em... Just stay close and mix 'em around more often, and maybe take 'em out sooner.. PS... Also gotta send out invites first... Makes you monitor it better when you know people are comin! 🤣🤣

liz...thanks for the feedback! I am scared to try curry...I have never had it. I am not a fan (yet?) of spicy foods in general.

😂🤣 Very far.... My wife and I used to luuuuvvvv roasted potatoes, carrots and chicken or a turkey with a little bit of bacon grease smeared on them... I grew up with that stuff... It's just a rare treat now... I'm pretty sure that recipe would attract some attention, just not the kind you're hoping for! 🐖🥔🥕🐔🦃 👍😋 😂🤣😂🤣😂

I've never roasted sweet potatoes, I bake them whole, 1 hour at 400° for a medium potato. I do roast veggies to make ratatouille, so delicious. Google roasted ratatouille, I just reduce the oil to about 1 Tbsp, works fine. Broccoli, cauliflower, brussel sprouts and cabbage I do about 30 minutes at 400°, stirring halfway through, then a few minutes more if needed. About 1 tsp oil unless it's a big batch. I like to toss my veggies with oil and a little seasoning in a big bowl, then pour onto my baking pan. Good luck and enjoy.

Sweet potatoes are much higher in sugar, so the tend to burn before they cook if you dont have enough oil. Enough oil means they're oven fried. Not low cal. SF1 is right. Roast them whole wrapped in foil. They come out super moist & tender. Just means you have to roast them 1st before putting in cut up veggies to finish in time for the meal. Because sweet potatoes take so long I roast more than one meals worth so I have them the next day.
