I made stuffed zucchini for dinner and the hubby and I both liked it! He normally won't eat zucchini but I did a trick with it. I scraped the inside out and sauteed it with some chicken I precooked, some other veggies, crushed garlic, bacon I made this morning, and some fire roasted diced tomatoes. He's not eating the "boat" it's in but he's still eating the zucchini. He just doesn't know. The son is neutral to slightly positive towards it but he's eating it too. This will most likely become a weekly dinner item. I really liked it.

Bacon is our friend. I love to cook (and eat) bacon but hate how it hasn't been on a decent sale lately. I found it 2 for 7 and had to get some. I ran out of my bacon stockpile in my freezer and can now restock it.

that sounds like a great idea..im blessed to have a hubby that likes all vegetables...thanks for the idea i'm always looking for different ways to present the vegetables

My husband likes the "sweet" veggies corn, peas, carrots and the only one we agree on is green beans. I love broccoli, cauliflower, asparagus, zucchini and more. I have to try and get him to eat more veggies. It only took 17 years to get him to eat lettuce that wasn't iceberg. He switched to romaine about 6 months ago. He won't eat spinach except for a few dishes that I make it in. I always need ideas to sneak in more veggies for him. My son isn't a problem, I tell him to eat and he does. He may take a while on some veggies but he always finishes.

It was so good I had two requests to make it again today. I did. No "boat" this time I just chopped it up and sauteed it. Just as good today.

We are having spaghetti squash lasagna. I found the lowest amount of sugar spaghetti sauce and cooked up some ground beef and sausage and added some mozzarella and ricotta cheeses. It looks so good!

Sounds great! Maybe tomorrow, I have 2 spaghetti squash sitting on my kitchen table just waiting.
