Just finished making coconut milk and finishing up the flour (it's still in the oven)so we can have pancakes tomorrow morning. Yay, pancakes! I found a recipe online I want to try and if I make the milk and flour myself I save a ton of money. The oriental market near me sells dried unsweetened coconut 1.50 for an 8oz bag. That's pretty cheap near me. If the recipe is good I'll submit it. Physical therapy today, back is still killing me but I did manage to get a bit of exercise in. About 15 minutes on the treadmill. Strips say I'm in ketosis so all is good there. Husband is NOT following along this time. He keeps eating/drinking items off of atkins. He complains about being heavy and he isn't changing his eating habits out of the house. Oh well, I'm doing this for me not him. He just got the benefit if he wants it.
