I decided to try this cauliflower risotto....served with oven cooked salmon & parmesan zucchini. A very low cal meal. It is nowhere near as tasty as real risotto, but not bad as a side for dinner.

Tatauu, I found it at Kroger. Becca, I figure if I'm going to stick with this lifestyle, my meals need to be tasty & interesting. I like coming up with new things to try.
