Ok! So for everyone asking for a recipe to my Beef stroganoff, here it is!

Meatballs:
--4 oz 85/15 ground beef (or whatever kind you have)
--1/2 TBS ground flax seeds (Badia- carb=fiber)
--1 egg yolk
--2 tsp mama francesca Parmesan cheese
--1 tsp garlic powder
--1/2 tsp basil
--a few grinds of pink salt
--1/2 tsp ground coriander
--pepper to taste

--1 (10 grams) of diced yellow onion
--1/2 tsp minced garlic
--1 & 1/2 TBS evoo (extra virgin olive oil)
--mushrooms, sliced 78 grams (i use a food scale, but it's about 3/4 cup)

I spread the beef out on a plate and sprinkled the seasoning over top. Add the egg yolk, and then mixed until just combined. Then roll them into 1 1/2 inch size meatballs you should get 8.

I added 1 TBS of evoo to my skillet and cook the mushrooms and then remove from the pan. Then I add 1 TBS of evoo and saute onions and garlic for a minute over medium low heat and then place meatballs on top. Cook for a few minutes and then rotate. The amount of time it takes will depend on your desired doneness and how hot your stove is. I didn't need to drain my pan since my meat wasn't fatty. Leave some drippings in the pan (left behind onions and garlic too) and set meatballs aside.

Sauce:
--2 TBS sour cream
--2 TBS of heavy cream (I use publix organic, there's no carbs)
--a sprinkle of salt, pepper, and garlic powder

Add all sauce ingredients in a warm pan and let simmer for 1 minute. Then add the meatballs. Rotate to coat in sauce. Let simmer another minute and then serve over mushrooms

The carbs are a lot higher than I usually go for 1 meal but the mushrooms were so worth it!
