Tomato and White Bean Soup
Easy soup that tastes good and freezes well.
Ingredients
Directions
- Heat oil in a large saucepan over medium heat. Add onion and garlic, and sauté 4 minutes or until tender.
- Add tomatoes and remaining ingredients (except for parmesan), and bring to a boil. Reduce heat, and simmer 10 minutes.
- Ladle into bowls, and sprinkle with cheese.
- Note: easy to have these ingredients on hand. When I have extra fresh veggies or small amounts of frozen left over, I just add them. This soup freezes well.

i loved this soup it was sooo simple to make and quick a warm hardy homemade meal. what i really like is its so flavorful when your dieting that helps. the next time i make it i'm putting chicken in .

I really like this. I put it in here. But it should be 8 servings of 2 cups each NOT 4. So cut the points in half. I can't figure out how to fix it.
