A traditional Portuguese soup which can be made as hearty as desired.
Ingredients
Directions
- Bring salted water to a boil. Add potato and onions to water.
- Using an immersion blender, puree the boiled potatoes and onions (remove some water if a thicker broth is desired, or for a thinner broth add more water).
- Add kale leaves into soup.
- Saute chorizo in olive oil. When lightly browned, add the chorizo and the drippings into the soup.
- Serve hot.

Reviews
This sounds wonderful, but if on Atkins or any other low carb diet, I recommend passing on the potatoes and substituting with cabbage or cauliflower.

I enjoyed this soup. I made it with ground Italian sausage though and it reminded me a lot of the zuppa tuscano at Olive garden. Also added red chili flakes because I like things HOT.
