Who needs beef meatloaf when you can have this amazingly moist turkey meatloaf.
Ingredients
Directions
- Pre-heat oven to 350° F (175° C).
- Sauté pepper and onion in cooking spray until soft.
- In a bowl mix ground turkey, spinach, sauteed vegetables, beans and egg beaters.
- With cooking spray grease bread pan.
- Mold meat mixture to fit. Bake about 30 minutes.
- In a small bowl mix ketchup with cayenne pepper and spread over top of loaf.
- Bake another 10 minutes or until fully cooked.

flmaingo72 - If u look at the recipe, it shows yield as 4 servings. The nutrition facts are for 1 of those 4 servings. Hope this helped.

I'm questioning this recipe, although it sounds good, I just looked at a package of 1% ground turkey breast which has a total of 120 cal per oz and this recipe calls for lb. that would be 480 cal just alone without all the other ingred. yet the nutrition says this serves 1 and the calories are 376. It should be at least 4 servings of this meatloaf, unless I'm totally of base.

The first really delicious, moist turkey meatloaf I've made. Added a couple of tablespoons of white miso for mild flavor...nice. Forgot to add the beans, but will try next time. This one's a keeper!
