A wonderful, light zucchini bread that's not too sweet.
Ingredients
Directions
- Pre-heat the oven to 325° F (165° C). Grease an 8x4 inch loaf pan.
- In a bowl, beat together the zucchini, sugar, egg, and oil.
- In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest.
- Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan.
- Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean.
- Remove from heat, and cool about 10 minutes before turning out onto a wire rack to cool completely.

Like most baking recipes, I cut the salt in half with no ill effect.
Also, nearly everyone who has been on DASH for at least 2 weeks says everything has more flavor.

This is the very first zucchini bread I bake and eat, and I gotta say it's great. I just added some water to the mix, and I used whole wheat flour with cereals in it. Yum!

I loved it, my picky kids love it. My husband said it didn't have much taste and it tasted fibery. but he is used to zuchini bread with lots of sugar.

I should have read the directions, I added 1/4 cup oil, and 1/4 cup of honey and it is really good, the lemon zest is a nice addition!!
