A fantastic breakfast alternative that's filling and really delicious. A good dessert option too.
Ingredients
Directions
- Preheat oven to 400 °F (200 °C).
- In a large mixing bowl beat the 4 packages of cream cheese and Splenda until smooth and fluffy.
- In a blender or food processor combine cottage cheese and eggs and blend until smooth.
- Gradually add to the cream cheese mixture. Fold in the vanilla extract. Pour into spring form pan or pie pan.
- Bake for 10 minutes. Turn the oven down to 200 °F (90 °C) and bake for an additional 40 minutes.
- Turn off the oven and allow the cheesecake to stay in the oven until cool.

This is an unhealthy option because of the lack of nutrition. These are essentially empty calories. It is very high in unhealthy sugars, saturated fat and cholesterol. There is no fiber, the calories per serving are very high and it doesn't help with fruit or vegetable intake. It does have a good protein content, but there are much more nutritional options for protein.
It's better than regular cheesecake, but this should be considered a treat.

I didn't blend away the cottage cheese chunks and my husband couldn't get past the texture. I really like it, but would prefer it without the chunks.

No one will believe that this dessert has lower fat. It's still a splurge though, so don't go nutty.
