Carrot and Walnut Muffins
A low-calorie treat without added sugars.
Ingredients
Directions
- Sift and mix the dry ingredients in a large bowl.
- Whisk the wet ingredients together.
- Make a well at the center of the flour mixture and add the wet ingredients.
- Add grated carrots, chopped walnuts and dates. Batter should be thick and moist and drop in globs from spoon.
- Distribute evenly in muffin tins. Tap to remove bubbles.
- Bake in preheated oven at 350°F for 25-30 minutes.
