- Cook quinoa as directed on packaging. Let it cool.
- Wash and dice all vegetables.
- Open and rinse canned beans.
- Mix quinoa, onions, beans, peppers, celery, and cilantro.
- Slice and squeeze limes to get juice.
- Make dressing by combining olive oil, red wine vinegar, lime juice, salt, sugar and spices. Pour over quinoa mixture then serve.
