While I have mostly been enjoying this diet adventure and trying lots of new vegetable recipes, etc. I'm not real sure about today's adventure: kale, apple, walnut salad with avocado dressing. Definitely a different texture and taste. I started out no liking it but it grew on me.
Having some trouble staying motivated to keep my calories down. I am still staying pretty well on track with the food selection. In fact, it's been so long since I had chips or coke, I hardly remember the taste. I find that I get to eat a lot more food for the same number of calories as the old "junk food, fast food diet". Today it was a shock to realize I didn't even want to finish my dinner.
I might have to invest in a small apartment-size chest freezer with all the fruits and veggies I've been freezing for smoothies, etc. Has anyone tried one of those "produce delivery" services? Someone mentioned that they were available in our area and it would sure solve the problem of getting fresh, local produce. The only grocery store I can walk to have very questionable produce sometimes, and you have to make sure to go on Tuesday or Wednesday to get anything fresh.
Have been breaking in my new Etonic Trans-Am sneakers for walking and thank goodness they are comfortable. My feet still hurt, but not as badly. I have orthotics from several years ago, but they don't seem to help as they did. Strangely, even swimming aggravates the pain in my feet, so still not sure about what the source is. Just hoping weight loss will help some of these things get better.

Yahoo! Approaching the 10 lb loss mark and I have been at this diet for about 5 weeks which makes me very, very happy. I wanted to lose between 1.5 and 2 lbs a week, so I am right on track.
The other challenge I wanted to meet was eating healthy and making meals from scratch. There are some extra benefits to doing this: cutting out the nasty chemical additives, saving money on eating "fast food", and eating more for the same calorie intake. I have definitely experienced these benefits.
I keep expecting to feel better or more energetic, but that's probably a little unrealistic. Over 40 years of eating junk isn't going to be offset by a month of eating real food, is it? :-)
The nice thing is, this way of eating is becoming "habit" already. I looked at donuts twice yesterday and each time it was, "ick" instead of "mmm". Even the last two grocery trips haven't been able to entice me into buying junk. In the past when I have dieted, I restricted calories without making changes to my eating habits, and it never lasted. As soon as I lost the weight, I went back to eating the same old junk and put it all back on, with interest...So, I am feeling hopeful that I can keep this up.
My next challenge is going to be putting up some healthy meals in the freezer so that when I don't have the energy to cook, I can just heat something healthy up, instead of resorting to pre-packaged meals full of chemicals and salt.
The inspiration for this weight-loss journey came from a high cholesterol report from my last blood test...and a family history of type II diabetes. I don't like taking any medications, so I really want to nip these problems in the bud, now.
Still need to work on increasing my exercise, without bringing on a fibro flare...haven't got the hang of that yet. They say it's all about moderation, and I am just not a moderate gal...sigh...when I feel good, I overdo it, then I pay the price and it's a while before I can do anything again. I am just hoping that losing the weight will take the pain in my feet away, so I can get out and walk a bit more. I ordered some new walking shoes, which will hopefully be comfortable enough to get me out of my croc flip flops. I know flip flops are horrible for walking, but the last pair of expensive walking shoes I bought caused even more pain! Frustrating.
I made the zucchini chips the other night and they were delicious,I basted them with olive oil and sprinkled them with salt and a little parmesan cheese. They didn't even make it off the baking sheet, lol ! Sadly 2+ hours in the oven is just to much energy to justify making them very often. Also, it would help to have a mandoline to slice them consistently thin, I did the best I could with a knife, but the chips didn't cook evenly.
