Zucchini Walnut Keto muffins with Blackberry cream cheese

Went to go visit some friends &invented these to bring. I'm so happy with how they turned out. Like a step up from bagels and fruity cream cheese. 😋

Thanks minniethekitty- I discovered Keto right when I was hitting a creative cooking streak so that was some nice timing. I'm trying to establish some serious lifestyle habits. 😊

Trucker Larry- I discovered a spot that is seriously one block from my house this year that is overflowing with blackberries. My daughter and I picked 4 POUNDS of them on Thursday. Crazy lucky because I think they might be the lowest carb fruit!

I'm going to post the recipe here on this conversation late tonight when I have some free time. I don't use the website- just my smartphone. I'm really excited about this recipe because I have a mini doughnut/bagel pan and this batter is going to make the best little Keto bagels! 😋 It makes me feel good to share here because maybe I can make a difference in other people's journeys. ❤️

*******RECIPE****** NOTE: I have made much more decadent Keto baked goodies from recipes online -THESE were designed to have the least amount of Keto stalling ingredients possible and still taste really GOOD and be appropriate for every day eating- NOT- special occasions. These are more like bagels and cream cheese than dessert. After chilling these muffins overnight- they sliced very easily into small "bread" slices and were delicious with gooey Brie cheese too! 😋 I used a few unusual ingredients that might be optional, (zanthan gum, THM oat fiber, maple extract) but since I tossed all of my conventional high carb baking ingredients 6 months ago, I've slowly stocked my kitchen with items that really help improve the texture and flavor of Keto baked goods. The muffins will probably taste good enough without them, but I encourage you to invest in them if you plan to bake low carb items throughout the year. The instructions seem kind of long but I actually made them very quickly. Also, they might stick to paper liners- I use silicone for my Keto baking. 😊Grease metal pans VERY well if you are going to use them. I do not recommend omitting the zucchini- it's what keeps the muffins from being dry. Adding a flavored cream cheese is the combination that makes it taste like its NOT weight loss food! 😊 ******************************* ******************************* This recipe makes 6 muffins ======Dry Ingredients: ====== 4 Tablespoons Coconut Flour 34 grams of smashed walnut pieces 1/2 teaspoon baking powder 1 Tablespoon Trim Healthy Mama Oat Fiber (zero calories, zero carbs) available on Amazon PURE stevia powder--Organic "Now Better Stevia"- 1/2 teaspoon - If you use another brand or type of sweetener- sweeten the batter as desired- you should taste the batter and adjust to your liking 1/8 teaspoon xanthan gum (available at natural food markets and Amazon) 1/8 teaspoon of cinnamon 145 grams of very finely grated zucchini with all the water squeezed out first with your hand, then try to get to out more liquid squeezing with paper towels. Large pieces of grated zucchini will not work well btw. Make it fine! =======Wet ingredients: ======= 5 Large eggs 1 teaspoons vanilla 1 teaspoons Frontier Natural Maple extract (yum!) ======Spread ingredients: ======= About 70 grams of blackberries Half a package of cream cheese (try to find the 1 carb per tablespoon kind like "365" at Whole Foods. Carb free sweetener of your choice A few pinches of cinnamon to taste if desired 1/2 teaspoon of vanilla if desired *********** MUFFIN INSTRUCTIONS: Grate the zucchini first, get as much water squeezed out as you can. Roll it tightly in paper towels while you do the rest Put all of the dry ingredients in a bowl or ziplock bag and mix very well then sprinkle the grated, squeezed zucchini into the dry mixture, lightly toss it around and try your best to get all the zucchini coated with the dry mixture. The coconut flour will start to absorb the water left in the zucchini. Set aside. Crack the 5 eggs into a medium glass bowl with an electric hand mixer until they are nice and fluffy. Add the vanilla and maple extracts. Mix again. Get a large spoon or spatula and fold the dry mixture into the egg mixture. Keep working it gently- until there are no runny areas and it looks uniform. Carefully spoon into 6 muffin forms (silicone is preferred). Bake at 350 degrees until a toothpick comes out clean and the tops are lightly browned. This could be anywhere from 6 to 10 minutes depending on how hot your oven runs. Cool on wire racks- they sweat while cooling! SPREAD INSTRUCTIONS: Weigh out about 70 grams of blackberries or more if you desire. Put them in a microwave safe bowl and crush them with a fork. Put them in the microwave for 15-20 seconds and then mash them again. Put this in the fridge to cool while you soften the cream cheese. Put the cream cheese in a separate bowl and put it in the microwave. Nuke it for 8 seconds at a time until you can stir it around in the bowl like frosting. Stir it with a fork until very smooth and then stir in the blackberries and desired amounts of sweetener, vanilla, cinnamon. Taste and adjust to your preference. While it's nice and smooth, spoon it into the dish you are going to serve it in. Cover with plastic and put in the refrigerator to firm back up. I think that's it! Enjoy! 😻

Maybe you need a Keto Recipe FB group 😜 I'm like you, I dread getting on my laptop! If you have an iPhone you can open Safari & go to FS website & scroll down to the bottom where it says Full Site. You can pretty much do everything without getting on the laptop. 😊

Xappie- Thanks for the top. I do have an iphone. Re: good--I'm just going through a creative streak this summer. When things get insane as school starts in 1 month I probably won't have time to develop a lot of recipes and will be glad I figured some stuff out over the summer. All 3 of my kids go to different schools because of their ages. Its intense. 😉

That does sound intense dealing with different start & end times. My two older kids are in the same school but my 4yo has ABA therapy from 9-12 & preschool (on the other side of town) from 1-4. I have to pick the big kids up at 3:15. The good news is she is doing amazing in therapy & we can hopefully drop that by November.
