Actually looks good - I've tried many low carb muffins and bread and they taste like cardboard. I might have to try these.

Actually, after I had already posted the photo, I came up with a wild blackberry cream cheese to spread on each half of a muffin. Omg. Nobody would know it was low carb. Insanely yummy combo. The breads are difficult- I invented one that's delicious but the ingredients are so high calorie that I only use it for special occasions and might use it more once I hit maintenance. I found this whey protein powder on Amazon called Hoosier Hill Farms that is flavorless and is a great flour substitute, especially when mixed with other low carb stand ins. I doubt you would be disappointed in the following biscuits- great with dinner or for breakfast sandwiches- deeelicious- I have made them for company: https://snapguide.com/guides/make-low-carb-biscuits/ My problem is that low carb bread is so high in calories, its hard for me to fit it in without stalling. I designed these Blackberry muffins to be the opposite- mainly eggs and protein powder with pinches of ingredients I can make progress with. 😊

NanaKP: they are made from scratch, but easily. I started by dumping 3 raw eggs into a blender with 4 Tablespoons of GOOD tasting whey protein "isolate". I added 95 grams of softened cream cheese, vanilla, no calorie sweetener ( I use liquid sucralose) -equivalent of about 6T sugar) a Tablespoon of ricotta cheese, 2 T coconut flour, 1/2 teaspoon baking powder, mixed the batter in the blender and poured into silicone muffin baking cups. Then I dropped 11 grams of blackberries (about 6 berries per muffin) into each cup of batter and baked til brown. Then I made a spread: smashed more blackberries into some cream cheese mixed in a touch of sweetener and ate the muffins halves with the spread. Hope that helps. 😍

Those of you who try this recipe- be sure and whip up the spread that goes on them: extra blackberries crushed into softened cream cheese with a touch of sweetener. You'll be glad you did! ❤️
