Good morning!

Just a quick check-in and weigh-in today.

It's Saturday, Wife and I are enjoying a couple of tv-shows at 7 AM, while I wait for a walking buddy to give me a call, then we're gonna go walk, go for our little Saturday buffet, and the a nice, relaxing day.

Weight is down, by quite a bit, and I feel really good today.

...

We had a fun day yesterday. Macros went out the window, but calories didn't.

It was a day that ended up busier than I had expected, I ended up just short of 30,000 steps, and a whopping 4200 calories burned.

I only had dinner yesterday. I just didn't get around to having lunch until it was dinner time, so that was it. We had a HUGE portion of ribs (with one tiny potato, just to make sure I eat my veggies!), and then ice cream for dessert.

It was a fun, busy day.

Today is our usual, relaxed Saturday.

I'll be going for a nice, long walk when my buddy calls me, and then spend the rest of the day with Wife.

Dinner is the King's home made Whole Wheat Lasagna. I will be looking forward to it! :)

Today, I'm thankful for:
- Weekend!
- Working on the company!
- Wife!
- Morning Coffee!
- Sleeping (relatively) late!

King, how many calories in that Whole Wheat Lasagna? Can you share the recipe?

I made a lasagna and didn't use any noodles of all...just layers of different kinds of veggies with homemade spaghetti sauce (made from a can of crushed tomatoes and fresh herbs and spices from the produce section of the grocery store) and lower fat cheeses. I used fat free cream cheese instead of cottage cheese or ricotta, part skim mozarella, and just a little sprinkle of parmesan. It turned out amazing and my hubby even loved it!!!

I have been taking all of my old favorite recipes and tweeking them into healthier versions by using low fat & fat free ingredients. Making a lot more things from scratch and using my food processor every day! I spend a lot more time planning healthy meals, and have been looking up healthy recipes from all over the world. I find I'm a lot more successful if I choose recipes with a lot of flavor, with fresh herbs and spices. I would never make it if I had to eat bland foods all the time!!! God has been so good to me! My husband is a trooper & has been eating healthy right along with me! I no longer DIET....I choose healthy food that goods for mind body & spirit!!! I can't describe to you how much better I am feeling both inside and out! I thank God for giving me the strength to make a healthy lifestyle change....this time...it's permanent!!! I even make my own healthy peanut butter now. 1 lb of peanuts makes a pint jar of the best PB I've ever had....no added hydrogenated oils, or corn syrup or any of that.....just peanuts. It doesn't separate like that "natural" kind they sell at the grocery store either...because it has no added oils. Peanuts have enough oil on their own. Just put 1 lb of peanuts (roasted, salted, honey roasted...whatever your favorite kind is) into the food processor. The peanuts will go through 3 stages: 1. powdery looking keep processing. 2. clump of dough looking stuff, keep processing 3. Peanut butter!!! Just like peanuts it does not have to be kept in the fridge, but if you like it a bit thicker you can refrigerate it. It doesn't separate so you don't have to worry about mixing and stirring it. After you tasted it, you won't ever want store bought PB again!!!!

Great attitude, Jraeb64! I am sooo gonna try to make my own peanut butter, thanks for the how-to! Hope I can get my kids to switch to it, much healthier than Jiffy/Skippy!
