Tried coconut oil in my coffee again - this time mixed with cream and whirled in my Magic Bullet until the whole thing was a big cup of froth. First few sips were enjoyable but them the coconut oil coated my tongue. Yuck! Sorry guys - can't do it.

Going to my step son's today so will be at their mercy for the lunch menu. To make a long story short - this won't be good! Making a salad to bring.

Got to run. DH wants to hit the road at 8 AM.

I go to a Monday night meeting every week where we have a potluck. One There are 4 women who cook and they know I'm eating low carb and unless they fix a green salad, they put rice, potatoes, pasta or high carb veggies in all the side dishes. They just don't understand the concept of low carb. I love it when one says I use SF jell-o in my 'canned' fruit salad. Yum. At least that doesn't tempt me at all. I know you can't do it, but sometimes I eat a cucumber or such before going to the meeting. Now that I'm down a couple of lbs, I hope I'll have more will power tomorrow night. Good luck.

I also tried coconut oil in my coffee. Seemed to separate too much, but I didn't blend it either. I prefer cream. :)

Radiochick - Today I was offered 1% milk to put in my coffee. Why bother? I just drank it black.

Good idea. I could pick it out, but she's 87 yrs and I think it might hurt her feelings so I usually just take a token spoon of it and smear it around the plate so she won't notice. I'm just soooo sneaky I scare myself! The main food is tamale pie.. don't really like it. plus it has the cornbread bottom and top. I usually only eat the insides. I'm going to take jalapeno poppers. Low carb and I love them.

dboza - Yes you are sneaky! Glad you mentioned Jalapeno Poppers. I have a bunch of hot banana peppers in the garden and they would make great poppers.

Sandy - Thank you - we had an enjoyable day. Took the dogs for a walk down to the creek so got a little exercise in as well.

Oh yum! Wish I had a garden. It just got too hot for it. Maybe next year I can get some shade cloth up.... I mean maybe I can get hubby to put it up.

Buffy, How did eating at you step-son's go? And have you tried the coconut cream (in a can)? It's not quite the same as the coconut oil, but it does have good stuff in it.
