Looks delicious. I have only tried elk once but it was really good. Great flavor.

Oh, man. I've never had Elk. Moose, black bear (bratwurst is awesome) venison, big Horn sheep... I'm missing something.... I also have a Traeger. I often wonder what I was doing when I used propane, because it sure wasn't BBQ. Following you now.

To Fadedbluesky, smoking on a pellet BBQ always gives a tender, juicy end product. No hot spots on the grill, no drying or burning. I've done roars at 225 for 2 1/2 hours, not peeked the whole time, and had a perfect today that I could almost inhale.

Yep! First attempt turned out pretty good! I used Mesquite pellets, some rub I’d never used before I found in the spice cabinet, then injected with a mix of 1 cup beef billion and 1 hefty tbs of bacon grease. Maybe got 1/2 cup injected at the most. 225f on the smoker for just over 3 hrs and pulled it out at 140f on the meat probe. Think I’d let it go to 150 next time but very juicy and tender. More like prime rib than roast! Yum! Good eating on the road this week! 🤠🚛🚚
