Well dangit! Not happy about that in the slightest. That being said, I did expect it, as the treats gave me sugar spikes. On that note...
Keto has been my saving grace in my fight against diabetes. I aim for less than 20 net grams of carbs, usually via veggies, cream and certain cheeses. I rarely eat fruits (never have when I was non-Keto either), but when I do, I stick with berries. I've always stayed away from sugar alcohols, except for erythritol, because it is touted as "safe for diabetics" as it "has no effect on blood sugar or blood insulin levels".
I'm here to tell you that's COWPATTIES! At least, for me.
Each time, after having a buttercream or cookie made with erythritol over the past week, I've felt wonky: off, weirdly buzzed. I'd test my sugars, as those were indicators in the past of high sugars for me. And sure enough, my sugars are up from 4.4 to 5.4. The butter tarts were worse, because of course they were mostly erythritol!
I was *never* out of ketosis. Just my sugars were affected!!!
Perhaps it's just my body. Perhaps it won't happen to you. But if you're diabetic, watch your sugars carefully around these so-called "no effect" sugar alcohols.
