You kind of need fat in salad dressing because you cannot absorb fat soluble vitamins from vegetables without it. I would think you want to absorb your vitamins😉 The best choice would be mixing some unrefined olive oil (or hemp oil, or any nut oil) with some balsamic or apple cider vinegar or lemon juice and add some unrefined salt and may be a dash of ground pepper. You can cut fat some other way. If you mix your dressing yourself (quite simple) you know exactly what you eat.
