I love tempeh for breakfast. Cut it up into cubes and sauté in olive oil. Then pour eggs over it. Nice protein and fiber kick to start my day. Or end my day sometimes. Gave up on tofu

I am not planning on going vegan. Just cutting back on some animal protein in a few meals a few times a week. Beans and legumes are great but this adds some more variety.

I haven’t cut out meat yet, unless you count coincidentally going a short time without it, but making the resolution for no meat, is why I say “vegetarian.” I count those few days as a start instead of a coincidental few days, that’s why I say that. New journey!!!

I started cutting back by only quitting red meat and shrinking my portions of meat by just as often, so even less than what you do!
Baby steps turn into big steps, if you plan on big steps, but if you don’t, that’s fine too. Now, 15 years after I decided to cut back gradually, I’m ready to cut meat completely, maybe forever but maybe not. Never too late even if it’s been more than a decade.
