Bean burger follow up post : It took a few years to figure out how to reduce the crumbling. I put those 30+ year old small coffee cups to use. Spritz inside with olive spray, press in 1/3 cup mixture, microwave 3 minutes, cool, brown in skillet.

2 cups black beans, 2 cups mixed beans, 1/2 cup diced mushroom, 1/2 diced onion, 1/4 cup chopped walnuts, 1 cup egg white, 1 and 1 /2 cup oatmeal, s &p. Browned in skillet using olive oil spray. Made 14 patties about 110 calories each.

I fit five cups in microwave. So microwaved in a few batches not individually.

thanks. You both browned and microwaved?

Liv yes. The microwave step will make sure it holds it shape. That and using enough egg and oatmeal as binding it will cook in a formed shape. Don’t flip them out of the coffee cups before cooling slightly ( just a few minutes ) allow them to set. And the cooking spray is a must.

You could use any glass or ceramic ramkin or other vessel. I found the coffee cups to be the right size.

YOH if you have ever made bean patties you know they are notorious for cracking and wanting to fall apart when you flip them. After 3 minutes in the microwave the egg and oats bind but they aren’t rock solid. I imagine you could also just form the patties and microwave on a plate. But I think for me packing it in a form worked best.

Yum! 🤤 Love me a good black bean burger! It is tough to keep them from crumbling - the recipe I use instructs me to bake them in the oven. They are fine (no crumble) when they come out, it’s when I heat them up again that they like to crumble.

So Honeybuns, I've made them for dinner before but never like that... would I prepare them fully then cool and freeze? Then if I freeze how would I prepare them later?

It would be so nice to have a few things that I could actually just make myself after I've made everybody else dinner but don't want a whole bunch of fuss.

Thanks for the recipe, honeebuns, I will try this. Psyllium husk powder is a good binder, I wonder if you ever tried it. I use it (alongside eggs, so it’s not the only binder) when making protein pancakes and lentil patties, especially if lentils are a bit mushy.

Agnes I have never used psyllium. I always just reach for egg and oats. I will check it out. Thanks !

What's wrong with using walnuts I think they add a great texture not to mention they add extra protein... ^^
