Just a simple microwave lunch nothing fancy: I prep and freeze veggies and meats in freezer lock bags. Today I pulled out some chicken, roasted potatoes, green and yellow squash, onion, grape tomatoes and drizzled a little olive oil and seasoning.

Looks pretty good to me especially for something out of the microwave you did a great job with your meal prep!

Leah what works for me is to not mix items in the same bags. For example there is a separate bag for tomatoes, onions, chicken and potatoes, etc. I also freeze things on a tray first and when frozen transfer to the bags. That prevents things from freezing in a big block. I will roast an entire bag of potatoes and freeze it all. I can mix and match in a variety of combinations for a quick lunch. It eliminates food waste and lots of dishwashing and meal preparation. Dinner is typically done differently and not from the freezer when I am cooking for more than just myself.

YOH thanks. It’s kinda like I have created my own freezer full of frozen vegetables and some fruits. I buy fresh produce and freeze myself. Most of my lunches are just a variety of stuff in a bowl.

Kmxler my taste buds find food more appetizing the less you alter the taste. Simple works for me.

Cool, I'll keep it in mind to keep the veggies in separate baggies. I do have a rather picky little man who sometimes will bulk at some veggies but he has been getting better at trying them at least once per meal before removing them from his plate 🍽️. I did already freeze them on a tray to prevent the block issue but it is a great tip so I thank you for letting me know. I always appreciate advice as you know I'm always interested in finding out new cooking knowledge. Plus I have holes in my knowledge because a lot of it was learned from watching others and personal studies so it's good to learn as much as possible ☺️.

I’m going to steal the idea of freezing roasted potatoes. Those are tough to make quickly for a lunch and defrosting a few makes so much sense!
