Sauerkraut is pretty bomb proof. My husband makes it all the time -- great stuff! Love kimchi, too, but we don't often have it. We used to make it all the time

Writing, I learned that all these probiotic stuffs need getting used to. Once you get pass the geting used to stage, you just can't have enough of it, just like yogurt.

Yep, definitely an acquired taste. But oh yes, so easy to get hooked once you've acquired it. I take sauerkraut to work for a snack all the time. I have an office with a door, so I can eat it in there and not offend my coworkers 😜 Have you tried making yogurt?

chia-nuts-cold-brew, they are, because of the probiotics and all. It's pretty simple to make actually. Kimchi is a little more elaborate. The other two are just the veggies and salt, plus water and cooked rice for the maman(green stuff). Ready in 3-4 days, sauerkraut might take a little longer tho.
