Sk is correct, go to karysroux.com for a gumbo recipe. If you want to make your own roux, first chop your onions. Then heat 3/4 cup vegetable oil (not olive or coconut oil) in a heavy pan over medium fire, stir in one cup plain white flour and stir constantly ( if you don't stir constantly your roux will burn & you'll have to start all over again) until the color of milk chocolate, then immediately stir in your onions and lower heat to low, continuing to stir until onions wilt, then add water or stock.

Steven, I do CICO (calories in, calories out), so there are no forbidden foods, only moderation. If I'm going to eat gumbo & rice for dinner I eat a light breakfast & lunch. I've just been maintaining for the last year or so, so I'm averaging higher than my usual 1500-1600 calories a day.
