Cat, the trick to good baked fish is to cook it 10 minutes per inch of thickness at 400°F. This fillet was a little less than an inch thick, so I cooked it 8 minutes and it came out perfect, opaque with a slight translucence at the center. I've been cooking fish this way for over 50 years, thick fish and thin fish and it works every time (but not for catfish, that takes about twice as long), just be sure your fish is not frozen.
