I like that it's all on a roasting pan and rough chopped. I have only made it a few times and painstakingly sliced all the veggies and lined them up in a casserole dish. Did you top it with a sauce after roasting?

Jazzy, I toss all the veggies except the tomatoes in a big bowl with a little Tony Chachere Seasoning, olive oil and balsamic vinegar and spread it in my pan. Then I quarter 7 or 8 Roma tomatoes, season them the same and spread them on top. 450° for 40 minutes, turn the pan and stir half way through. I don't add a sauce, the tomatoes combined with the rest keeps it from being dry. I've tried different ways, this is the one I like the best. As we Cajuns say, Bon Appetit! 💜💛💚
