I lightly season it with Tony Chachere's Original seasoning and cayenne pepper, rub the fish lightly with yellow mustard then shake it in a bag with Slap Ya Mama Cajun Fish Fry. Bake for 15 minutes at 425° (the fillets were small) and serve over a bed of lettuce and tomatoes with tarter sauce on the side.

It's got to be really good catfish. I soak mine in buttermilk. It's a bottom feeder, so unless nice and fresh, it can taste muddy. Shirfleur's looks fabulous ❣️

I would love some... Or some cod or snapper or halibut freshly caught. We live so close to the waters from where they come, yet fish is so costly. 😳 😵

Melissa, any white fish will do, but you might not cook it that long, most fish I do 10 minutes per inch of thickness; catfish is different.

One thing I usually do that I didn't today is squeeze lemon juice over it as soon as I take it out of the oven. I didn't have any lemons.
