yall I rediscovered the old school muffin in a minutes. I do 3 tbsp gtound flax flour (they sell it at .99 cent store or trader joes cheap if you have those where you are), 1 tbsp butter, 1 egg, splenda to taste (i like a good amount), 1/2 tsp baking powder, 1/2 tsp vanilla extract(optional but does improve taste), 1 tsp cinnamon, stir well and microwave for 45 seconds....just like eating a delicious bran muffin and gives me like 10 grams of fiber!!! keeps me full all day!! <3
