1 cup Carbquick Baking Mix
1/3 cup Avocado
1 tbsp Coconut oil
2 tbsp whole egg (real egg this time)
(Wish I could have added a little baking powder)

Mix & mash ingredients together thoroughly. Add more or use less Avocado till consistency of cookie dough. I added an extra tbsp Avocado. I didn't mash up the added Avocado all the way as the small bits of darker green made the dough look more interesting. Next time I'll leave some of the dark part of the Avocado (just under the skin) less mashed for better-looking result.

No idea how long to bake in a oven. I actually cooked these in a microwave. 1/4 of the dough, separately, for around 60-70 seconds. Surprisingly, still taste quite good and came out more moist than plain Carbquik biscuits.

Don't seem very "Avocado-y" at first, but after a few chews very subtle Avocado taste and better texture than the baking mix alone. Probably OK w/o added egg. Baking powder might be nice to make them fluffier.

I think they're pretty good. I gave a piece to a overweight resident who loves avocados, but hates "diet food". She thought it was "excellent".

Carbquick has 2 "net" Carbs per serving. The "raw" carbs are higher, but all that is fiber so can be subtracted. I got it on-line at Amazon.com, but other on-line places sell it and some health food stores carry it. I've made Cream-of-Chicken Soup, Egg Noodles, Sausage gravy, several different recipies of Bisquits & now these guys. These are the best biscuit/scones so far. The Avocado taste is barely noticeable, though I LOVE avocados and wish they were more avocado-y. I'm not used to eating plain avocados either, and only started a couple months ago when I read they have so few carbs and a ton of healthy fats. I hadn't had one since childhood till then & thought they were gross as a kid. Love them now. I"M planning to use a couple of these in place of plain biscuits for biscuits & gravy specifically because they are mild. Adding avocado is really great because it helps the biscuit/scone keep more moist & is full of mono- & poly-unsaturated fats. The Avocado taste is barely perceptible, but the taste & texture of the biscuit/scone is greatly improved. I'm sure adding bacon & some bacon drippings will be awesome.
