So, dying for a burger yesterday - added spinach, mushrooms, artichokes, a slab of Havarti and wrapped it in lettuce - gotta love Keto! Threw some Parsnip chips on the side and half a pickle. Yum. Awwww, I remembered to take a photo and it won't let me load it.

Parsnip chips? How do you make those?

I have to scale my pics down about 25% of original and apply a 1:1 aspect ratio for them to load, which is a pain in the arse, but I'm shooting from a Canon SLR and my pics are pretty humongous. Your burger looks great!

Preheat oven to 425 F and line 2 baking sheets. Use a mandolin slicer or vegetable peeler to slice the parsnips into thin slices. In a large bowl combine: parsnip slices, avocado oil OR olive oil and salt. Toss with a spoon to coat in oil and salt. Place parsnip slices onto lined baking sheets. I also like to fry radishes (peel/slice as desired, fry them to almost done-I use olive oil, then add a little chopped onion, pre-cooked crumbled bacon, salt & pepper to taste and fry until done.

I buy my Parsnip chips at Trader Joe's - 12 chips to a serving, they're crunchy, slightly sweet.

Just so you, the kids at Keto Connect found out that TJ's parsnip chips have the wrong carb count on the package. If you check the count for raw parsnip, you can figure out what it should be for the chips.
