So, I've been cooking like a fiend! I think the question I get most from hubby, Mom or my friends is "what are you making now?" lol I'm trying every recipe I can find, yesterday we had grilled pork steaks (yes, hubby barbecued in 30 degree weather), Kim chi and cauliflower mac and cheese. The spicy cabbage really offset the creamy cauliflower. I was actually shocked, hubby said "I could eat the whole pan of this cauliflower." What? Him liking a veggie??? :-) Granted it was smothered in cream cheese, cheddar and had mustard - all his favorites, but it was low carb and I agree wonderful. He even said he was going to finish the rest for lunch today. I know you guys don't know him, but it's a total victory! This man does not like veggies. I really looked for something he'd like, since I tortured him on Saturday. I gave him spaghetti squash, spinach and goat cheese, with hamburgers. He's a trooper and ate it, but he was not pleased. He's such a love, I got real lucky with him! My Mom on the other hand continues to whine and complain that I'm going to "hurt myself" by not following the diet the hospital gave me. That was 1600 calories and had me eating over 165 carbs a day. My sugars were up and my energy was way down. Now I'm energized, loosing weight and my sugars - can you guess? Yes, my sugars are going down! Saturday I woke up with an 81!!!!!!

All of that food sounds really good. I love spaghetti squash and make it often. Great news on the sugar levels. Keep up the good work.

Spaghetti squash my absolute favorite, I don't miss pasta at all! Riced cauliflower is very tasty too!!

Maeday42 sounds like you're doing great. I wish I liked to cook. My friend says the Cauliflower Mac and Cheese is good, too. I might have to try it. Glad your blood sugar is down. Mine is too. This diet works for diabetics. Keep on keeping on!

Your mom means well. I have the same type. She nags me about lchf and wants to send me to a nutritionist. I said okay but one I pick. I found one who is okay with Atkins and Paleo diets. My husband has done low carb with me in the past and isn't worried, he knows the benefits. Maybe you can find one in your area that is low carb friendly that you can bring your mom too?

You do what's working for you. I have a theory about hospital diets...they're nuts. I'm a type 2 diabetic and when i was in hospital for a surgical procedure, they tried to feed me starch upon starch. I remember one breakfast was pancakes, orange juice, milk and an apple. No protein. Really?!? do you guys know i'm a diabetic, i ask? Yes, they tell me. Okay... i was so glad to get home i didn't know what to do. I had to have people bring me things i could eat cause the hospital just wasn't getting it. they're stuck on the SAD meal plan. (standard american diet). so keep up the great work. 81!
