I took a chicken breast, 1/2 teaspoon salt and pepper (or what ever think is enough), and sliced it almost in half, making something like a pocket. I put some sun dried tomato, mozzarella and pesto sauce inside. Toothpicks helped to keep it together. Cooked it over the stove top in olive oil till chicken was done, time depends on how big the chicken breasts are. As an alternative you can pan sear for 2-5 min a side then cook in oven, 400 degrees for 25-30 min. On the second batch I did I used garlic salt, enjoyed that more.
Yeah I need to get back into that routine. I’m sure I do my appetite will return to normal. I’m sure the cooler weather is also playing into it. Perhaps subconsciously I am prepping for Thanksgiving 🫤
