So far so good... I am adjusting well to this wonder we call OWL. So pleased that the weight continues to come off, slowly but surely. I am having a bit of a challenge this week getting all my food in. Evening appts or commitments are getting in the way of my evening meal. Another thing that has been a bit of a challenge for me is to get my percentages just right. (Fat 60% Prot 25% Carb 15%-OWL) Lots of experimentation and early-day preplanning is helping but the last couple of days I've not been getting it nailed right-on as I'd like. Not stressing about it, just gonna roll with it and be thankful I am not gaining any weight.

Wanted to share my new favorite diet-idea! For the past two day's lunch I've had the most incredible turkey sandwich. (Shocking...a sandwich? How can that be?) YES!! Here's what I did. I used my standard "muffin in a minute" recipe and instead of putting the "dough" in a coffee cup, I placed it in a shallow bowl - heated it up, and it comes out nice and flat. I simply cut the flat bread in half and topped it with mayo, mustard, veggies and turkey and there you have it -- an amazing sandwich! Another tip - I cut back the cinammon by half, but kept all the other ingredients the same. It was really good! And, another thing I am loving now that I am on OWL is unsweetened almond milk. OMgosh is it wonderful! My favorite part of each day is a chilled cup of that wonderful-goodness! :)

Haven't been on FS as much lately b/c my personal PC was in the shop for repairs. Because my 'puter had some years on it, it was determined that the work they would do to do on it would actually cost me more than the PC was worth, so they gave me a good deal on a brand new PC and they were kind enough to transfer all of my saved documents and databases/programs over to the new PC. I've now got twice as much memory (and the older one had a lot) and three times the space on the hard drive. Also, I'm happy to have Windows 7 and a wireless keyboard and mouse! Yippie! It is amazing how the prices in technology have come down. This newer system was about $600 less than what I paid for my computer 8-9 years ago.

Great job on the new OWL. I love my windows 7 on my laptop. Its a Toshiba I hardly ever use the computer in my bedroom any more. Have a great weekend..Oh how is your husbands knee? Hope it is mending well....Bren

Strong work on OWL. Glad you got a new PC too. Mine died in January and I've been using a laptop of my BIL. At some point I'll need to spring for one.

Sherill, how unfortunate. Did you lose *everything* or did you have important stuff backed-up? That is what I was dreading the most - since I work from home I have tons of important stuff on my PC that I would be lost without. SO glad I was able to get all that good stuff transfered securely. I was concerned that my PC would "give up the ghost" one day and I'd lose it all before having it all saved to cd. How is your hubby doing today? Is he being a good patient for ya?

I mostly just had photos and some games on it.Nothing too major! Thank goodness! BTW, your sandwich sounds like a great idea. I am going to have to try it!

Hi Evie, you sound so upbeat and positive, a pleasure to read. Your sandwich sounds good too, I must look for a shallow container. Is your soup recipie on here on FS? I've been thinking of soup lately and not sure what to make the 'base' out of ie chicken stock or what? Hope Jim is doing well to and that your crazy dog is taking it easy on him. Glad you got a new 'puter, I got a new laptop at the end of last year and just love it.

Hi Is! Thanks for stopping by. = ) You may access my cookbook and check out the recipe for my Creamy Loaded Vegetable soup. It's terrific! For the stock I use chicken broth and heavy cream (or half and half). 2 C brocolli, 2 C cauliflower, a bunch of chopped onion, celery, mushroom - and seasonings. Then I add cheddar at the end and stir until melted. Yummy!

Thanks Evie, it looks delicious. I am looking for something filling for breakfast. I could probably add cooked chicken to add protein. I don't like eggs unless they are hidden in something like a MIM. I can't find my MIM recipe and there apparently is a MIM recipe that uses almond flour as well. I have almond flour now and can't find that recipe either!

Evie, flaxmeal pancakes - what does 'two servings of flaxmeal' equal ie one tablespoon is one serving? 1 serving baking powder = 1 teaspoon? Thanks and sorry to be a nuisance. I raided your cook book!

Is, LOL - so glad you raided my cook book. Here's the skinny on those pancakes. I use 1 TBSP of flax meal. and I use 1/2 TSPN of baking powder. Following the recipe, it yields 3 large pancakes, which equal one serving. (I use a 1/3 C measuring cup to scoop and pour the batter onto the griddle.) I often double the recipe for Jim and I because it is his most favorite breakfast meal. Enjoy!!! = )

Is, here's an idea. Use the traditional MiM recipe and then instead of using 1/4 cup flaxmeal, divide it in half - using both flaxmeal and almond flour as 1/4 cup combined. It tastes great and has a nice "cakey" texture. I think you'll like it!!

Is, suggestion for those pancakes. I doctored it up to improve it. Wanted to just give it to you straight to avoid any confusion. Check out today's journal so you can see the BEST way to make the Cheesecake pancakes.
