Great news! I can start running next week! I am excited 🎉 Anyways, thanks for all the support and kind messages along my journey. Its been a wild one. I really like reflecting and cringing at my old journal entries haha. Oh and I'm starting to experiment with crock pot recipes. Do y'all have any favorite recipes that you could share? This Friday, I'm planning on making roasted beef tips with baby potatoes, carrots and cauliflower. peepers, I can post recipe but if you go to pinterest, put in italian beef sandwiches, recipes will come up. The one I use has italian dressing and pepperchinis in it. It uses a chuck roast. It's my go to when I have to make potluck and everyone asks for recipe.

Diana 1234, I'll go and try that on Pinterest. Love that site! It's so easy, but I know it isn't too sodium/calorie friendly- low fat though haha.
Put 2lbs of boneless skinless, chicken breast in the crockpot, then layer 2 cups of your favorite green or red salsa on top of the chicken breast, 1/2 cup of low sodium chicken stock, 3 teaspoons of your favorite taco seasoning packet. Set on 4 hours high. On the last hour of cooking add, 2 cups of precooked black beans (or pinto), 1 cup of frozen corn, 1 cup of roasted green peppers. I would also lightly shred the chicken. After it's done cooking, shred chicken completely. I serve this with pico de gallo, cilantro, 1/4 cup of shredded pepper jack cheese per serving on top with homemade tortillas.

Diana 1234, because this recipe uses premade salsa you can make it a green chile salsa or red salsa. Either way, it's delicious!
