I'm retired, enjoying an occasional day of substitute teaching, and lots of days at home with my husband and kitty cat, Camille. I've discovered that there is a "middle of the day"! Ha. I've reached my weight loss goal but still need to keep a close watch on the calories so I don't gain back what I worked so hard to lose. My hobbies are bird watching, walking, reading, and playing the piano.

Cauli Rice
I cooked my cauliflower until it was almost done first (softened but not mushy), then put it through the grating process - once used a regular grater, once a food processor. It seemed to make lots less mess than the time I tried it without cooking! It still had the rice-y look, and I just basically warmed it in the microwave with butter and salt before eating. It makes a great base for saucy dishes, and my husband likes it this way as well. It doesn't have the same texture as real rice, but it's sure close enough!

Lunch out today
I've had Wendy's hamburger (bunless) and a side salad with blue cheese or ranch dressing. Actually, it doesn't even take a whole packet of dressing since they give you a lot. I imagine most any burger place would have this kind of choice. I also noticed another person on the Atkins site used grilled KFC chicken and a salad or green bean side. I can't think of anything at Taco Bell... unless you had their taco salad without the shell or beans. Salsa doesn't have many if any carbs, does it? and sour cream and/or guacamole would be allowed. I've had the Subway philly steak and cheese as a salad (they'll do any of their subs in salad form, apparently) and it was good - seems like it came in at about 7 carbs with dressing. Are you in OWL yet?

Do you have Skeleton's in Your Closet?
That's a wonderful question, since so much of my attention has been on losing down to goal weight, and right now trying to maintain it, I guess I need to set a goal other than "me." Any suggestions?

As for the skeletons... that's a part of our flawed human nature - everyone makes mistakes, big ones, and has to live with decisions they wish they had never made! Life's circumstances sometimes put us in the position where choices are difficult and there aren't any perfect answers. Challenges to test our mettle!

pilates/ yoga
I think things that raise your heart rate by moving quickly (jogging, pilates, walking fast, exercising to a beat...) would be cardio. Things that move slowly without raising heart rate, but that use muscles for balance or strengthening, or that are geared for increasing muscle mass (yoga, weights...) are obviously strength training.
