I've been wanting meat loaf, but since I'm eating LCHF, I needed a substitute for bread crumbs in my recipe. Light bulb came on! I crushed up some pork rinds to sub in for the bread crumbs - score! My meat loaf is in the oven and smells awesomely delicious!

I make more of an Italian meat loaf, with Italian seasonings so the loss of ketchup isn't too bad. My favorite is a Dutch meat loaf, which includes tomato sauce & brown sugar, so that's a No!
